Castelnaudary is inseparable from cassoulet, that legendary dish of Lauragais lingot beans, duck confit, Toulouse sausage and pork rind, slow-cooked for hours in an earthenware cassole. But the town offers much more than a dish: the Grand Bassin of the Canal du Midi, a vast 7-hectare water basin dug by Pierre-Paul Riquet in the 17th century, is one of the canal's most impressive structures. This is where barges cross paths, pleasure boats make their stop and the setting sun sets the water surface ablaze in golden hues. The upper town retains its medieval character with the Saint-Michel collegiate church, the Cugarel windmill (the last windmill in the Lauragais, restored) and cobbled lanes. The surrounding Lauragais is nicknamed 'Land of Cockaigne' — referring to the pastel balls (cocagnes) that enriched the region during the Renaissance. Castelnaudary is also a stop on the Way of Saint James. The town hosts the annual cassoulet festival (August) and the Fest'Oc Occitan music festival. A taxi from Toulouse is perfect for a gourmet cassoulet lunch followed by a digestive stroll along the canal.
Route
Route Toulouse → Castelnaudary
From Toulouse, your driver takes the southern ring road then the A61 motorway towards Carcassonne. Very quickly, you enter the Lauragais, a vast agricultural plain with rolling landscapes. Fields of wheat, sunflower and rapeseed follow one another, punctuated by pink-brick farms and typical wall-belfries of the Toulouse area. The Canal du Midi winds alongside, invisible from the motorway but omnipresent in the landscape — you can make out its rows of plane trees and cypresses. After the Naurouze summit (the Canal du Midi's highest point at 189 m, the watershed between Atlantic and Mediterranean), you descend towards Castelnaudary. The motorway exit leads directly to the spectacular Grand Bassin. A61 tolls on this section amount to approximately €5. The journey takes 45 min under normal conditions. Note: during harvest season (July), farm machinery on the secondary roads leading into town can slow the final kilometres.

Specific tips for the Toulouse → Castelnaudary route
Castelnaudary is THE town for authentic cassoulet. Must-visit addresses: the Grand Hotel Fourcade (an institution since 1860), the Tirou restaurant (Michelin Guide starred) and the Maison du Cassoulet for artisanal preserves. A real cassoulet is eaten at lunchtime, not dinner — it is a hearty peasant dish. After the meal, the Grand Bassin promenade is ideal for digestion: 2 km of landscaped banks, pleasure boats, ducks. The Cugarel windmill (10 min uphill walk) offers panoramic views over the plain and canal. The cassoulet festival (late August) features giant tastings and jousting on the Grand Bassin. For the sporty, the Canal du Midi towpath is perfectly maintained for cycling. The Castelnaudary market (Monday morning) is renowned for its lingot beans, confits and Lauragais foie gras.
