Provins, a UNESCO World Heritage Site since 2001, is one of Europe's best-preserved medieval cities. The upper town, enclosed by 1,200 metres of 13th-century ramparts, houses Caesar's Tower (a unique octagonal keep), the Saint-Quiriace collegiate church, medieval underground passages and the tithe barn. In the Middle Ages, Provins was one of Europe's largest cities, hosting the Champagne Fairs that drew merchants from across Christendom. Today, 300,000 annual visitors enjoy medieval shows (eagles in flight, knights, bird displays) and Provins roses (Rosa gallica, used for jam, honey and sweets). Transilien P serves Paris-Est in 1h20, but the taxi is favoured by international tourists, groups and time-pressed professionals.
