Bayonne is the historic and cultural capital of the French Basque Country, classified as a Town of Art and History. Built at the confluence of the Nive and Adour rivers, the city boasts half-timbered houses with red and green shutters typical of Basque architecture, medieval lanes and the majestic Sainte-Marie Cathedral, a UNESCO World Heritage Site as part of the Santiago de Compostela pilgrimage routes. Bayonne is world-renowned as the chocolate capital of France: Basque chocolatiers carry on an ancestral craft introduced by Sephardic Jews in the 17th century. The city also hosts the Fêtes de Bayonne (late July), five days of white-and-red festivities attracting over a million visitors.
