Mirepoix is one of the best-preserved bastides in southern France. Founded in 1289 by Guy de Levis, Marshal of the Faith during the Albigensian Crusade, this small Ariege town is a jewel of medieval architecture. Its arcaded square (Place du Marechal-Leclerc) is arguably the finest in southern France: entirely bordered by wooden galleries (the couverts) supported by carved oak pillars, it offers an architectural ensemble of remarkable coherence. The 13th to 15th century half-timbered houses framing it present carefully restored polychrome facades, adorned with wood carvings depicting characters, animals and plant motifs. The Maison des Consuls, with its corner beam carved with over a hundred figures, is a masterpiece of medieval popular art. The Cathedral of Saint-Maurice, begun in the 14th century, has the widest single nave in Southern Gothic architecture (21.40 m). Mirepoix is also a key site in Cathar country: the original town, destroyed by flooding in 1289, had sheltered the last Cathar parfaits. On Monday mornings, the Mirepoix market fills the arcaded square in an authentically Ariegeoise atmosphere: Pyrenean cheeses, mountain honey, black pork charcuterie, Pamiers beans, apple croustade.
Route
Route Toulouse → Mirepoix
From Toulouse, your driver takes the southern ring road then the A66 motorway (La Pyreneenne) towards Foix and Pamiers. After about 50 km, you exit at Pamiers-Nord to take the D119 east towards Mirepoix. This road crosses the Ariege foothills plain, fertile farmland alternating between corn fields, meadows and copses. The Pyrenees loom to the south, with snow-capped peaks in winter and spring. After about twenty kilometres, Mirepoix appears in the countryside, dominated by the cathedral's octagonal bell tower. Arrival is through the town gate, which leads directly onto the arcaded square. A66 tolls on this section amount to approximately €5. The journey takes 1h under normal conditions. On Monday mornings (market day), town centre parking is saturated — a taxi is then the ideal solution for arriving directly at the square.

Specific tips for the Toulouse → Mirepoix route
Monday morning is THE day to visit Mirepoix: the market under the couverts is a spectacle in itself. Arrive before 10am to browse the stalls of Pyrenean cheeses, mountain honey and artisanal charcuterie. The apple croustade (handmade phyllo pastry, apples, butter, Armagnac) is the local speciality — every baker has their own recipe. Stroll through the lanes around the square to admire the half-timbering and wood carvings. The Cathedral of Saint-Maurice impresses with the width of its single nave — the widest in Southern Gothic. If you have time, Montsegur Castle (35 km, 40 min), the last Cathar refuge in 1244, is an unmissable excursion: the climb is athletic (30 min walk) but the views and historical emotion are exceptional. In summer, the Mirepoix Puppet Festival (August) transforms the bastide into an open-air theatre. Les Remparts restaurant, in a medieval house, offers refined local cuisine.
